Here is another very versatile recipe that you can make with basic ingredients in your kitchen. This was another recipe created using the extra spinach and swiss cheese that we had in the fridge. They were so yummy! I pretty much love any type of quesadilla, but these were even more enticing because they had spinach in them! That means they’re healthier
- Heat up your quesadilla maker or heat a skillet if you’re cooking them on the stove.
- Put one flour tortilla on and top with shredded swiss cheese, cooked & diced bacon, and cleaned spinach leaves.
- Put the other flour tortilla on top and grill until lightly browned (if cooking on a skillet, cook until browned on the bottom, then flip and cook until the other side is lightly browned).
- Cut into slices or wedges and serve with sour cream if desired. Enjoy!

Onion Bacon Rolls
(adapted from Mr. Food – Cookin’ Quickies)
8 slices of bacon
1 small onion – diced
1/2 tsp. black pepper
16 oz. refrigerated roll dough (I used Pillsbury)
1/4 cup milk
*After baking these once before and getting 2 thumbs up, I suggest adding seasoning of your choice to the roll dough to give it even more flavor. Perhaps some garlic salt or onion salt!
Cook bacon in large skillet until crisp. Remove bacon, reserving 1 tbsp drippings. Crumble bacon.
Saute diced onion in the bacon drippings until tender. Remove with a slotted spoon and drain on paper towels.
Mix bacon, onions, and black pepper in a small bowl.
Pat each roll of dough into about a 3″ circle and spoon about 1 tbsp bacon mixture into the center of each roll. Bring up the edges and pinch them together to seal closed.
Put dough pockets seam side down into a lightly greased muffin pan.
Brush rolls with milk (you can sprinkle a little shredded cheese on top too if you wish).
Bake in a preheated oven 375° for 15 minutes or until golden.
Since our previous Fun Nights had been for friends only, we decided to have an evening to show our families what these fun nights were all about. And so Smith Family Fun Night evolved and the letter O was chosen. The event took place on Saturday, September 3, 2011. We had a great time and our families did too!

We ended up pretty much eating, talking, and playing games all evening. It’s great to have such good friends and family members in my life, and I’m blessed and grateful for those relationships <3
I have tried many variations of Pasta Carbonara, ranging from having a raw egg on top (an Australian version, not so good) to pancetta and peas mixed in. After getting married, my husband and I decided that we would try to implement as many new recipes into our diet as possible. One recipe that we wanted to make the best possible version of was Pasta Carbonara. I went through so many recipes online but couldn’t find one that epitomized what Pasta Carbonara meant to us. Thus, the creation of our own version! The definition of “carbonara” means “a sauce for pasta containing eggs, minced bacon or ham, grated cheese, and seasonings” (The Free Dictionary).
Smith Pasta Carbonara
8 oz. egg noodles
1/2 lb. bacon, diced
1/2 cup chopped onions (we’ve used yellow and red, they each give different flavors)
4 oz. sliced mushrooms (optional)
1/4 cup butter
1 cup grated or shredded cheese (we use what we have on hand…sharp cheddar, Italian blend…play around with different types until you find one that you like)
2 eggs, lightly beaten
Salt and pepper to taste
Cook pasta, drain, run warm water over egg noodles, set aside.
Cook bacon in large skillet until crisp. Remove bacon from pan, place on paper towels to absorb grease.
Pour out remaining bacon grease, leaving about 2 tbsp in the pan.
Saute onions and mushrooms for about 2 minutes. Remove from skillet and drain.
Melt butter in skillet.
Add the pasta, bacon, onion and mushroom. Add cheese, salt and pepper. Stir until blended.
Add eggs gradually and mix for a minute or so until well blended.
Remove from heat and serve. Should make about 4 servings.
Please eat slowly and savor the delicious flavors. I tend to eat one scrumptious noodle at a time, while my husband on the other hand gobbles it down immediately, which isn’t anything new
