For my hubby’s birthday last year I decided to surprise him and make a golf inspired cake. I think I saw this idea originally on pinterest, and it was a lot of fun to make. All you have to do to start is bake a chocolate rectangular shaped cake. For the frosting, tint your vanilla or cream cheese frosting green, whichever shade of green you desire for “grass”. To best get the grass effect, spread on a thin layer of frosting over the entire cake first. It will give your piping something to stick on to. I do not have a “grass” frosting tip, so I used the one that could best resemble grass. It was actually a lot of fun piping rows and rows of the frosting grass, and I loved the way that it looked! Next, use a round glass to cut out the “hole” for the hole in one. Just press your glass upside down into the cake and it will give you a circular cutout. Feel free to eat the part of the cake that you need to remove To finish it all off, insert one clean golf ball and voila! You have a hole in one!

We watched Dodgeball (always a good choice) and played Disney Trivial Pursuit. We actually learned a lot of new info about Disney. By the way, I can’t even begin to describe how excited I am about the expansion at The Magic Kingdom! When I was at Disney in May with my family you could see the construction and the anticipation is building and building! They’ve announced that the grand opening will be December 6. I wish I could go!
This was our end of February party. The food was really good and the company was even better

We played Apples to Apples and watched Anchorman and Aladdin. It was a great night with great friends
This Smith Night took place in January 2012. It ended up being another snowy night, no surprise there, considering the past few parties have gotten snow (including the October snowstorm)! We should start forecasting the weather each time we plan a party…hmm…anyway. We had 2 of our favorite couples over; Kim and Frank and Chris and Amanda. The only gripe I had was that cellphones were everywhere! I’m going to have to instate a new “No cell phone” rule. Be with the people who are in your company please Here’s the lineup:
Egg Salad Sandwiches
Easy Taco Dip (recipe in a future post)
Egg Noodle Lasagna
Elegant Raspberry Bars
Eggnog Thumbprint Cookies
Enchiladas (courtesy of Kim)
Eclairs (courtesy of Kim)
We watched Edward Scissorhands…have you seen it? It’s an amazing movie from when I was younger. Johnny Depp in another classicly strange roll. We played MadGab for the first time as a group and it was hilarious. Girls vs. Guys and the girls totally rocked! If you’ve never played MadGab it’s basically phrases and famous names rewritten in different words and you have to guess the real phrase/name. For example: “”Eye Mull of Musheen” = “I’m a love machine”. It’s so much fun!
Could you guess that this was our “H” edition party? You’re one smart cookie, you are! So if you live in or near New England, you know that we had an unseasonal snow storm in October 2011. This one happened on Halloween weekend, boo! The storm hindered our plans, but Kim and Frank were troopers and came over anyway. Thanks guys, we love you! Another pro to not having alot of people showing up is that there was more food for us, sweet! Here is what we served:
Hearty Calico Bean Dip (recipe to follow)
Halloween Pumpkin Dip
Hummus and Veggies
Hazelnut Chocolate Chip Cookies
Honey Maple Cookies
We watched Halloween (the original with Jamie Lee Curtis). Not to be a Debbie Downer, but it wasn’t that scary, and if you know me, I am a fraidy cat when it comes to movies. We made the most of the evening and even wore our costumes. Good thing we cleaned up soon afterwards, because the power went out at midnight and stayed out for 2 days. Thank goodness we had friends in the area that had power and let us use their shower, and that we weren’t as unfortunate as others who lost power for over a week! Friends helping friends…the world needs more people who will extend a helping hand to those in need.
Since our previous Fun Nights had been for friends only, we decided to have an evening to show our families what these fun nights were all about. And so Smith Family Fun Night evolved and the letter O was chosen. The event took place on Saturday, September 3, 2011. We had a great time and our families did too!

We ended up pretty much eating, talking, and playing games all evening. It’s great to have such good friends and family members in my life, and I’m blessed and grateful for those relationships <3
Of course we had to have an evening dedicated to numbers! What a fun twist on the letter evenings. This event took place on Friday, August 26, 2011. Here is what we served:
7 Layer Mexican Dip
5 Cup Fruit Salad
3 Cheese Baked Macaroni
Triple Smoked Pasta
Double Chocolate Banana Pound Cake (recipe to follow)
4 Chip Cookies
7 Layer Bars (Courtesy of Kim)
Entertainment: I believe that we watched 10 Things I Hate About You and played games all night. Games make life more amusing – no doubt about it
Q Night took place on Friday, July 29, 2011. Here’s how it went.
Queso Dip & Chips
Queso Burgers (cheeseburgers)
Quinoa (Kim brought it)
We played the game Quelf. If you’ve never played this game before, you should. It’s so random and hilarious. To paint the picture, let me elaborate. Quelf revolves around different rules being played in the game. They can be a rule assigned to one person or a rule assigned to the group. At one point my husband had to find a helmet to wear for the rest of the game. On one of my turns I had to mime being stuck inside a box and being attacked by rabid ferrets. My sister had to ask her feet permission before speaking. Her friend had to end every sentence with “sk”. For example; “It’s your turn now(sk). I don’t like this rule(sk)”. All of this plus much more equals hilarious fun
This shindig took place on Friday, April 29, 2011. The details are as follows.
Three Cheese Fondue
Tuna Pasta Salad
Toffee Cookie Bars
Toasted Coconut Scones (courtesy of Tastefully Simple)
Tiramisu Trifle (recipe to be posted)
Twisters (adult beverages)
The plan was to watch Toy Story 1 & 2, but as usual I was so busy being hostess that I don’t even remember if we watched it. I believe that we did, and our DVD player kept skipping, so we probably stopped it and played a game instead I also do not have any photos from this evening…so sorry if this one lacks excitement!
So sorry for the lack of posts lately. My schedule has been super busy and then there was the power outage of 2011 in CT…we were lucky enough to lose power for only 3 days. I think that there are still people without power and it’s been almost 2 weeks now!
We had our Smith Fun Night “Z” Edition on Saturday, March 19. We ended up taking a break from parties due to winter weather and the lack of parking spaces in our neighborhood.
Zesty Shrimp Cocktail
Zucchini & Tomato Casserole
Zucchini Chocolate Muffins
Z Street Cocktails
A friend made Zucchini Quiche and it was delicious. We watched Zoolander (I don’t even remember if we actually watched it because I’m usually in the kitchen preparing/serving food!). But what I do know is that Just Dance was turned on for our Wii system and everyone took turns dancing. What a fun night…we were laughing so hard from the crazy dance moves. What an uplifting evening with great friends!
