I made these for our Smith Night “O” Edition and they were very yummy indeed. This recipe is taken from the Taste of Home Cookies cookbook. I’m sorry that I do not have a photo of them…I need to get better with documenting photos of my cooking and baking. I would love a nice fancy camera for that! ::wink wink::
Oatmeal S’mores Cookie
(makes about 6 dozen)
1/2 cup butter – softened
1/2 cup shortening
1 cup packed brown sugar
1/2 cup sugar
2 eggs
1.5 tsp vanilla extract
3 cups flour
1 tsp baking soda
1/4 tsp salt
1.5 cups oats
1 cup dark chocolate chips (could use semisweet as well)
1 cup mini marshmallows
In large bowl, cream the butter, shortening, and sugars until fluffy.
Add eggs one at a time, beating after each addition.
Mix in the vanilla.
Combine the flour, baking soda, and salt. Add to the sugar mixture and mix well.
Stir in oats, chocolate chips, and marshmallows.
Drop by heaping teaspoonfuls 2 inches apart onto greased baking sheets.
Bake at 350° for 9-11 minutes or until golden.
Cool for 1-2 minutes and move to wire racks to cool completely.
